Assessment of Physicochemical and Microbiological Quality of Chili Vinegar and Chili Powder Used in Food Establishments in Saensuk, Chonburi Province

Abstract

This study aimed to investigate the physicochemical and microbiological quality of chili vinegar and chili powder served in food establishments in Saensuk Subdistrict, Chonburi Province. The quality assessment of chili vinegar included examinations for physical contaminants, free mineral acids, and acetic acid content. Chili powder was analyzed for physical contaminants, coliform bacteria, Escherichia coli, and mold contamination. This research employed a survey research design. Samples were collected from 30 food establishments covering communities surrounding Burapha University, the Park In tourist market, and Nong Mon Market. Descriptive statistics were used for data analysis. The results revealed that 56.7% of the food establishments were street food stalls, while 43.3% were restaurants with permanent buildings. Most food establishments used commercially produced condiments rather than preparing them in-house. Regarding the quality of chili vinegar, no physical contaminants or free mineral acids were detected. However, 26.7% of the samples contained acetic acid levels outside the standard requirements. For chili powder quality, 16.7% of the samples failed to meet physical quality standards due to abnormal color, lump formation, and rancid odor. Coliform bacteria contamination exceeding standard limits was found in 16.7% of the chili powder samples, while mold contamination above the standard level was detected in 56.7% of the samples. The mean mold counts in commercially packaged and bulk chili powder samples were 3.5 × 10³ and 3.0 × 104 CFU/g, respectively. The findings indicate that some condiments used in food establishments still present quality and safety concerns, particularly regarding mold contamination in chili powder. Therefore, strengthening production standards, storage conditions, and hygienic handling practices for condiments is essential to improve food safety and safeguard consumer health.
