Abstract

The obtained optimum conditions using RSM were a 25,000 mg/hr ozone and treatment time of 30 min. At the optimum condition, the shelf-life of Kaew Kamin mangoes was longer under the 21 days at 25±2°C. Application of the optimized ozone treatment condition, when compared to the untreated control, was significantly affected in preserving postharvest quality of the fruit. Specifically, the treatment effectively delayed weight loss, maintained alteration in peel and induced adaptaion in pulp color attributes (L*, a*, b*, chroma, and hue values), and maintained fruit firmness, titratable acidity, and cellular membrane integrity as indicated by lower electrolyte leakage. Conversely, no significant differences were observed in total soluble solids, ascorbic acid, and total phenolic contents, and antioxidant capacity between treated and untreated samples.
